\nPotato and Carrot Soup<\/h4>\n

\n1 Tbsp. (30 ml) extra-virgin olive oil or butter
\n4 medium potatoes, peeled and diced
\n4 carrots, peeled and diced
\n1-3 cloves garlic, finely chopped
\n4-6 cups (1-1.5 L) chicken, beef, or vegetable stock
\nSalt and freshly ground pepper to taste<\/div>\n

<\/span><\/p>\n

\nHeat the oil in a large pot over moderate heat and saut\u00e9 the potatoes, carrots, and garlic for 2 to 3 minutes. Add the stock and bring to a simmer. Cook until the vegetables are tender, about 20 minutes. Adjust the seasoning with salt and pepper. Serves 4 to 6.<\/div>\n
